Molly’s Dreamy Peanut butter Pie
(so they call it)Crust is actually my chocolate chip cookie recipe so here is that first:
M’s Cookie dough
1 cup butter
1 cup oil
2 cups brown sugar
2 cups white sugar
Cream above ingredients
4 tsp. vanilla
6 cups AP flour
2 tsp. baking soda
2 tsp. salt
1 1/2 bags chocolate chips or other baking candies
I typically put the crust in a 9 inch cake plate. Just put in several big spoonfuls and press flat into pan. It’s totally up to you on how thick you want it to be. Bake at 350 until LIGHTLY browned. If you bake too long it will be crunchy and I HATE crunchy cookies. For the regular cookies it is 8 minutes in my oven!
You can also line muffin pans and put a dollop of the cookie dough in pressing down a bit in the middle.
Filling if you are gonna make them into the peanut butter pies:
1 8 oz. cream cheese
4 T creamy peanut butter
1 T butter (softened)
2 cups. powdered sugar
Beat all together
This filling recipe will cover 2 9-in pies
Depending on what way you baked your cookie dough you can spread on top of the 9 inch pie or just squeeze a dollup on the tops of the muffin size. After you have put filling on crush candies and drizzle melted chocolate over those. The options and variations are endless-Enjoy!
