Yesterday I mentioned some things I have enjoyed doing for school lunches. It takes a bit of planning and time, but all in all, it is so very worth it! Here is the recipe for my kid’s favorite lunch item.
1 cup warm water
1 cup warm milk
1 T honey
2/3 c. soft butter
2/3 c. sugar
2 tsp. salt
7 1/2 c. flour
2 packages yeast (4 1/2 tsp.)
1/2 c. soft butter
Dissolve sugar in water and milk and add the yeast and let sit for about 10 minutes until it’s foamy. Stir in egg, salt, 2/3 c. butter, and honey. Stir in the flour and knead dough for 5 minutes.
Place dough in a greased bowl and cover with a towel until doubled (about 1 hour). Divide dough in 1/2 on floured surface and roll into rectangle.
Jar of pizza sauce or just tomato sauce with a sprinkle of oregano and garlic salt. Spread on dough and sprinkle with cheese and layer with pepperoni.
You can also do a ham and cheese with a ranch dressing spread for something different.
Roll up and slice to desired thickness.
Let rise until doubled. Bake at 400 for 10-14 minutes.
Pop in individual bags or in an airtight container and throw in freezer. Grab the out in the morning for a quick heat up or let your kids heat em up at school. Enjoy!
