Sometimes making new desserts can lead to huge smiles and filled bellies. This Pineapple twist of a dessert got leaping praise from my family! Just a little info----it is very rich so don’t try to eat 1/2 the pie in one sitting.
|2 1/2 cups graham cracker crumbs|
1/2 c. melted butter
Mix and place 2 cups of mixture in a 9x9 pain or a pie plate.
Bake at 300 for 8-10 minutes. Let cool.
20 oz. crushed pineapple, drained
2 cups powdered sugar
4 oz. cream cheese
1/2 c. soft butter
8 oz cool whip
Beat Cream cheese and butter til’ creamy. Turn to low and add powdered sugar. Turn up and beat well for 1 minute. Add 1 heaping T drained pineapple. Stir in with spatula and spread on cooled crust.
Fold rest of pineapple into cool whip and spread on top of cheese mixture.
Sprinkle remaining crumb mix on top. Refrigerate for at least 4 hours.
