Nothing beats a warm bowl of hearty soup on a chilly fall day! Several years ago my oldest helped me develop this Cheeseburger soup. He was pretty pumped to have his name at the top of the recipe card.
It can be poured in a crockpot or just cooked in a stockpot if you desire.
Chloe helped me chop the veggies, grate the carrots, and brown the meat.
Brown the meat, with the celery, onions, and garlic. When the meat is browned add the potatoes, seasons, bouillon, carrots, and 2 1/2 cup water. Let it simmer until veggies are tender.
Add your flour and stir until dissolved. Add the cheese and milk and let simmer until you serve. If desired, top with cheese, chives, and bacon crumbles.
Andrew’s Cheeseburger Soup
4 c. ground beef
½ c. water
5-6 c. peeled and chopped potatoes
1 ¼ c. celery, diced
1 c. diced onion
1-1/2 c. grated carrots
2 cloves minced garlic
3 beef bouillon cubes
2 ½ c. water
5 c. milk
6 T flour
1 ½ c. cheese
Season with salt, pepper, onion powder, paprika, oregano and dash of basil for taste.
Brown beef then combine with ¼ c. water. Add chopped veggies, bouillon, water and spices. Cover and cook 20 minutes until veggies get tender. Combine 1 c. milk and flour. Pour over meat and stir. Add rest of milk and stir until thickened. Remove from heat and add cheese and crumbled bacon. Serve.
