Chicken & Red Onion Quesadillas~Day 28

It’s a simple recipe today and a bit on the lighter side. You can spruce these easy quesadillas up with some corn, peppers, black beans, and more. But, sometimes it needs to stay easy with as little ingredients as possible.

Just whip up the paste ingredients and cover your chicken for a few hours. Grill your chicken and onions and put together your quesadillas. Grill on both sides and enjoy!

Chicken & Red Onion Quesadillas

Paste: 2 garlic cloves, 1 jalapeño, 1 cup cilantro, 3 T olive oil, 2 T vinegar, 1 tsp. salt, 1/2 tsp. oregano, 1/2 tsp. pepper
Quesadillas: 3 chicken breasts, 1 large red onion cut into slices, olive oil, 2 cups cheese, 4 flour tortillas, salsa, sour cream

Food process paste ingredients. Coat chicken, cover and refrigerate 3-4 hours

Divide and grill chicken and onions. Fill tortillas with stripped chicken and onions, sprinkle cheese on top. Fold tortillas in half. Grill in olive oil. Serve warm with sour cream and salsa
